Pesto and Mozzarella Chicken: Tasty Tuesday

I'm so excited to share this recipe with you!  I thought it was delicious!

It has pesto and cheeses... you can't go wrong with that right??

Ingredients:
1/4 cup Parmesan Cheese
1/2 cup Italian seasoned breadcrumbs
3 Cups mozzarella cheese
1/2 (small jar) pesto
1/2 cup milk
8 thin chicken cutlets
8 toothpicks

Directions:
1. Wash and dry cutlets. Preheat oven to 450 degrees.  Lightly spray a baking dish with non-stick spray.
2. Mix Parmesan Cheese and Italian season breadcrumbs together, set aside.
3. Mix Pesto and Mozzarella cheese together, set aside.
4. Dip chicken in milk, then in breadcrumbs, then spread 1/8 of pesto mix on piece of chicken, roll up, and place a toothpick through the chicken cutlet to hold it together.  Repeat with remaining chicken
5. Bake 25-30 minutes.  Serve immediately.  


I served this with spinach salad and cheese croissants, so good!
